Almost everyone loves stuffed mushrooms. This veggie version - we call them "Fakin" stuffed mushrooms - replaces bacon with Morningstar Vegetarian "bacon". They taste great and make a terrific appetizer for any dinner party!
“Fakin” Stuffed Mushrooms
Ingredients
24 whole snow cap (white button) mushrooms
Olive oil or grapeseed oil
1 tbsp. onion dip seasoning or dried onion flakes
About 4 strips of your favorite “fake bacon” -
we like Morningstar
8 oz package of cream cheese or tofutti, softened
2 tbsp. chopped chives
How we make it
Remove stems from mushrooms; brush caps with grapeseed
or olive oil.
Mix onion dip or dried onion flakes with the softened cream
cheese/tofutti.
In a small skillet, add enough grapeseed or olive oil to coat the
bottom. Add the fake – ok I’ll stop saying fake and say vegetarian
bacon.
Allow the “bacon” to begin to crisp, flip for 15 seconds, re-
move from skillet and allow to cool enough to handle.
Once “bacon” has cooled slightly, break (or cut) it into small pieces.
Mix it with the cream cheese and onion dip mixture.
Fill each mushroom at the opening where the stem was removed
with the mixture.
Bake on cookie sheet at 350°F for 10-15 minutes.
Remove from oven; sprinkle with chives.
Makes 24 appetizers.
