Use this Leek Soup For Two recipe as a sort of "generic" light soup
recipe. You can add to it to suit your taste but the premise here is
that this soup is an excellent
base for a quick soup that is easy on your diet!
Leek Soup For Two
Ingredients
1 leek (be sure to use everything but the
dark outer leaves)
2 cups of water
1 vegetarian bouillion cube (you can get these
in vegetable or "chicken" flavor - but vegetarian)
1 medium potato, diced
1 small onion, diced
How we make it
Cut the leek into one inch sections and then cut
each section lengthwise. This makes it easier to clean
any residual sand or dirt away.
Slow cooker method
Place all of the ingredients in a slow cooker. Set the
slow cooker to low and leave it to cook until you
come home from work.
Microwave method
Place all of the ingredients in a microwave safe, 8-cup
glass bowl and cover tightly. Cook on High for about
12 minutes.
Saucepan/Stovetop
Simply place all ingredients in the saucepan, cover and
bring to a boil. Then reduce the heat and simmer, uncovered
for 15 to 20 minutes.
About Pureeing
Many people enjoy their soup with "chunkier" ingredients.
However, if you use a food processor or blender to puree
the soup before serving, it will actually enhance the flavor
and provide a smooth, creamy texture.
Cream Soup
If you absolutely love and have to have cream soups try adding
an extra potato, pureed, to the soup. That keeps calories down
while adding a creamy texture.
If that won't work for you, use only 1/2 cup per person of either
low-fat or non-fat milk or non-fat yogurt. Add these after pureeing
the soup and reheat on low heat before serving.
