There is something about this apple salad with roasted asparagus that simply satisfies me every time I eat it. I love apples and I love asparagus, so I guess it is only fitting that I would love this salad. Apples and asparagus make a surprising flavor blend. We like to use a green apple, such as a Granny Smith, as it brings a tartness to the dish that is then complimented by the sweet earthy flavor of the asparagus.
