The Pumpkin Pie Powerhouse Smoothie, contributed by our friend Jillian, had been given the correct name! This smoothie is indeed a powerhouse. It's loaded with folate, iron, antioxidants, phytonutrients, soy protein, fiber and Omega 3s. And the best thing is that despite its green appearance, because of the spinach, it tastes just like pumpkin pie. Wooohoo! Who wouldn't like that?
Jillian says her pumpkin pie powerhouse smoothie
"blends to perfect smoothie consistency in Vitamix or
Health Master type blenders. If you have a more conventional blender
that works well too, but may not break down the apple, you can substitute
frozen blueberries with a very pleasant result. Not quite as much of a
traditional pumpkin pie taste, as you will taste the berries, but still
very good."

Pumpkin Pie Powerhouse Smoothie
Ingredients
1 cup Silk Very Vanilla Soy Milk
1 cup Orange Pineapple Juice (Big Tex or other brand that is 100% juice)
2 TBS flaxmeal
1 apple, cored
1 cup cooked, cubed Butternut Squash
½ can pumpkin (15 oz can)
2 big handfuls of fresh spinach
1 teaspoon Pumpkin Pie Spice
How we make it
Place all ingredients in a blender and blend till smoothie consistency is achieved.
*It makes one large smoothie or two medium. If the consistency is too
thick for your preference, you may easily add more soy milk, juice or
filtered water.
Pumpkin pie in a glass amped up with nutrients and minus the butter, fat, dairy (and guilt) of actual pumpkin pie…it doesn't get any better than this!
